I'm pretty sure that in the 2nd meeting, they came up with the idea of the Declaration of Independence and that Thomas Jefferson will write it. The representatives of each colony except Georgia, wrote a petition to King George the 3rd.

The reasoning for the first Continental Congress was to address grievances that the colonies were experiencing in association with the King and Parliament. What came out of that meeting of the colonies was a declaration and resolves to be sent to the King of England in the hope they would be addressed, therefore further bonding the colonies and England together. They resolved to meet again in a year to discern if the grievances had been addressed.
