Even though they called themselves Romans, they spoke Greek. The capital city was Byzantium, and was renamed Constantinople after Emperor Constantine the Great, a Latin name, however the peoples of the eastern Roman Empire were Greeks, with a thin Roman overlay, which faded as the empire split into east and west, and the western empire was then taken over by the Goths , Vandals, Franks and other peoples

Greek. Byzantine is a term coined by modern historians in reference to the Eastern Roman Empire after the fall of the Western Roman Empire. As it lost most of its non-Greek territories as a result of the Arab invasion of the Middle East south of Turkey and Egypt and the Slav invasions of much of the Balkans, the empire became centred around Geece. Greek replaced Latin as the offical language of the empire.

The term Byzantine is derived from Byzantium, the Greek town that was turned into the capital of the east by Constantine the Great and was renamed Constantinople. It is used highlight the Greek character that the empire developed.

What do historians call the eastern roman empire?

Not sure what you mean by "new." Historically, it would be Byzantium. The Byzantine or Eastern Roman Empire began with the Roman Emperor Constantine I in the 4th Century CE; as Western Europe was collapsing into the Dark Ages, he moved the (his new) Roman capitol to the location of Byzantium in Turkey; to become the great city of Constantinople (known today as Istanbul). It continued on as the premier power center of civilization & culture of the Eastern Mediterranean for about a 1000 years, until it was conquered by the Ottomans...
