One difference is that.. The Mecklenburg Resolves demand independence for themselves, while the Declaration of Independence demands independence for all of the thirteen colonies, now the independent United States of America.
Another is that the Mecklenburg Resolves wrote it themselves, yet the Declaration of Independence was written by, yes, one person, but everyone made it up, and signed it. :)
