The Declaration of Independence was an open letter to the king and without it we may not have left the British government. Not that many colonists were upset with the king and many didn't care. They only got involved when something happened that upset them. Many stayed neutral the entire war. Washington had problems getting enough men enlisted.

We would all be British or English and we would drink tea instead of coffee.

Without the Declaration of Independence, the USA would have remained under British rule. But, both France and Britain had interests in America (remember the French and Indian War), so it is possible the two countries could have entered into a second round of conflict about ownership rights. Remember that at the time, lands west of the Mississippi had not been settled, so if those two countries had fought again for control over the US, it's possible the US could have been split into territories for each country. Luckily, in a sense, the conflicts that had raged worldwide at the time of the French and Indian War and later had depleted resources and economics in many countries, so it would have been much harder for overseas countries to fight over "us" in the (still) New World.

Without the Declaration of Independence, the US still could have chosen a different form of government. It's possible-- though unlikely, since most colonists fled their countries because of government oppression, over-taxation, etc. So citizens of the US were looking for an independent government, run "by the people". At the time, this was a great driving force to create individual freedom from government interference and illogical, high taxes. When the colonists first came here, the British still tried to impose all kinds of taxes on goods (remember Boston and dumping of tea) and services such as fees on creating public records (for example: deeds for sale of land). People wanted to remove themselves from all that and truly be in charge of their own destinies.

The US might not exist. That document stated that the US was separate from Britain. Without it, it could still be British.
