The most obvious answer is to show you miss them and wish they can move safely to the afterlife or heck, live another life, depending on religion. If you're an atheist, you respect the dead to make sure they can rest peacefully and sleep "undisturbed".

But there's another reason why people respect the dead: Out of fear. Everyone knows how grotesque dead bodies are. It is the fear of the belief the dead will come back and haunt us that drives us to respect them.
