Tournaments in England were carried out as military exercises, a practice and display of prowess. Jousting was one of the popular tournaments where two knights would ride towards each other in a single combat.

The Middle Age tournaments were most notably carried out as an extension of knight training. Later regulations would arise, but these tournaments were simply for practice and displays of prowess, rather than any form of hostility.

1st Answer:

There were few sports played in the middle ages. The nobility hunted for sport, used falcons for sport, gambled, and had horse races. There were archery contests, ax throwing, and caber tossing as well as Wrestling. Henry VIII did introduce tennis and hand ball ( but he was after the middle ages).

2nd Answer:

A little research shows there were many different kinds of sports in the middle ages. They included several different forms of football; tennis; battledores and shuttlecocks, which is reminiscent of badminton; different kinds of foot races; horse races, with or without chariots, depending on what part of Europe you were in; swimming races; boat races; jousting; wrestling; boxing; sword fighting; a long list of other Martial Arts; sports involving throwing things farthest and sports involving throwing things accurately; many different forms of hunting, with on foot or horseback, with or without hawks or dogs, with bows. swords, or even lances; billiards in a dizzying number of forms, including lawn billiards; a number of types of bowling; sports involving skating; sports involving skiing; archery; golf, though it was not recorded until the Middle Ages were just ending; and a number of others, including contests invented at any moment for the purpose of making a bet.

These sports were played rather informally, compared to the way sports are played today. The idea of standardized rules came long after the Middle Ages ended.

Sometimes there were sides, such as one village against another. Sometimes there were no sides, and it was each person for himself.

Sometimes there were rules agreed to in advance, and sometimes it seems there were next to no rules at all. A form of medieval football, called mob football, does not even have a restriction on the number of people on each side.

Tournament games were advertised in advance, with invitations going out to people who were considered important to have in attendance. Other games were pretty much spontaneously begun.
