This is just information that I gained from reading a Medieval Times book at school. The jobs that Medieval villagers did were things like.

Planting vegetables in the garden,

They ploughed at the month of Feburary, and women and children helped to drive the oxen.

On march, the seed for oats had to be sown and then the villagers used a harrow which was then used to cover the seeds over with oil.

Other jobs included weeding, chasing away birds, and even more ploughing.

In the month of June the villagers sheared the sheep, and the hay harvest in the meadow began, the hay was then cut and stacked in the barn, the villagers allowed the cattle in to the field to eat the stubble.

Men villaers collected firewood, they had to dig draining ditches and repaired buildings.

This isn't much, but this is all that I discovered. (:

There were all sorts of jobs that were done. Of course, the farmer was always there. The rat catcher who would put a sweet smelling oil on his hands and catch the rats alive. The smith who made horseshoes and other metal objects. The dye maker who dyed cloth ( this was pretty stinky because of what they used). The tanner, another stinky job who tanned the hides to make leather. A baker was always around because everyone needed fresh bread everyday and add to that a miller because he would grind the wheat. The hog and beef farmers were another group that could usually be found. Innkeepers as well as stables were there as well. A representative of the crown that acted as the law and the courts. A woodcutter would also be around because everyone needed wood. The church, of course, and depending on how large the town was there were people attached that did things for the church as well as the local clergy. Night watchman could be there, again it depended on the size. If there was a royal estate near then there were all sorts of jobs that were done in conjunction with the estate. Rag pickers were usually found. They collected material and resold it. Bone pickers too collected bones because they could be used for all sorts of things. Then, there were little jobs like people ( whole families) who sat and made little metal pins all day. There was a need for these because people held their clothing together with straight type pins ( must have hurt). The ever present royal solider. That should give you some idea and this is hardly a complete list.
