Its almost easier to say which ones weren't fighting Germany. Except for Spain, Portugal, Italy, Switzerland, Romania, Finland, Sweden and Ireland, every country in Europe was fighting the Germany. In addition there were,Australia, Canada, New Zealand plus assorted other parts of the British Empire and, of course, The United States. Michael Montagne America, Russia, Britain, Canada, French Resistance, Danish Resistance and well Sweden called themself neutral because they didn't fight back they helped the both side and was 1 of the mostly Nazi friendly country's (they even had a own SS div and Hitler speak Swedish :)) The United States,The British Commonwealth(including Canada and Australia)and the USSR

In November 1944 the Brazilian 1st Infantry Division, under the command of Major General Joao Baptista Mascarenhas de Morais, joined the American Fifth Army in Italy. The division served with distinction through the North Apennines & Po Valley Campaigns to V-E Day, May 8, 1945.

Mexico's spark into entering WW2 was when a German U-boat sunk two of Mexico's biggest oil ships while they where passing by The Florida Keys. Mexico then helped with the liberation of the Philippines. It sent an air force of about 60 airplanes (of which only 4 or 5 were gunned down) and a sizeable army.
