Rory O'Connor, born in Dublin in 1937, joined Macardle Moore & Company, Dundalk on 20 August 1956 as a Pupil Brewer; serving his pupilage for 42 months (Heriot-Watt University, Ind Coope, Romford, Burton on Trent and Macardle Moore Breweries). In 1959 he was appointed Assistant Brewer at Macardle Moore and Company becoming Third Brewer in 1962 and Senior Brewer in 1965 at the age of just 28. In 1969 he was appointed Group Production Manager at the Irish Bonding Company, 2/4 Severn Street, Belfast, becoming Irish Bonding Group Production Director in 1972. In 1985 he became Operations Director at Guinness, before being appointed as Production Director of Guinness Northern Ireland on 1 July 1989. A man with not a political bone in his body, he worked through the worst of "the troubles" and he was successfull in steering a safe path through both sides of the political divide. He retired in 1998 and until his death in 2011 he operated as a professional gambler, focusing on hors racing.
