Because they were the only ones that had to pay sky high taxes while the 1st and 2nd estates didn't have to, because there was no freedom of speech, religion and press, because they wanted to be able to chose their own cabinet so a constitutional monarchy could be realized. The 3rd estate felt it wasn't right that they were the ones that had to pay up for the luxurious lives of the 1st and 2nd estate and the royal family.
This old regime had been designed by Louis XIV. He was also the King who had ordered Versailles to be build, which caused the treasury to be empty and eventually caused the bankruptcy of France. The 3rd estate had to fill the hole the debt had left in the treasury.
THIRD ESTATE:everyone else (the 'common people') leaving the nobles and the church in France.
the third estate was the only estate who had to pay taxes. they had absolutely no power over how the government should be run. no one listened to them. some doctors, bankers and merchants were quite wealthy and lead reasonably comfortable live, but some peasants lived in absolute poverty. king Louis the 16th did nothing about this, he himself was in a crisis-running short of money.
when the estates general met, he declared a new tax, and peasants were already taxed a lot...making everything possibe for the third estate to be unhappy...
Louis XVI was not a good leader and felt it was better not to lose the favor of the two smaller Estates. He denied a request by the Third Estate to have the votes counted by the head rather than the estate. As a result, the Third Estate saw they could not reason with the king and this opened the path to revolution.

The third estate in pre-Revolutionary France was the commoners. This made up the majority of the French population. The first and second estate were the nobility and the clergy, who basically allowed the king whatever he wanted.
King Louis was bound to the Ancient Regime which had three Estates within the Estates General. The First Estate was the Catholic Clergy, the Second Estate was the Nobles and the Third Estate was everyone else.

The First Estate was the clergy, about 1% of the population. The Second Estate was the nobility, about 2% of the population. The Third Estate was everyone else, about 97% of the population. King Louis XIV, King Louis XVI, and Marie Antoinette drained the French Treasury. The French gave too much financial aid to the American Colonists in their fight for independence from England. King Louis XVI and Marie Antoinette spent lavishly, thinking the Third Estate would foot the bill by paying higher taxes.
