Strictly speaking, it is not a pigtail but a ponytail, in the sense that it is not to the side of the head (which would make it a pigtail). Rather, it is at the back of the head and almost perfectly central, which makes it a ponytail. Also, bullfighters bullfighters ponytail is usually fake.

This is said to be inherited from the Roman gladiators, although this may be only hearsay. The gladiators used to have long hair, which they are said to have arranged in a ponytail presumably so that it would not get in the way while fighting. Bullfighting as we know it today did not exist during the Roman Empire, but the ceremonies of bull sacrifices did. During the Roman Empire, those ceremonies became increasingly spectacle-like... very showy and also bloody in the gladiator style.

Bullfighters are often compared to gladiators. Although this is a fundamental error in concept, it is quite possible that their appearances may have been influenced by them.
