Because these crops could be grown on inferior soils without irrigation, Chinese cultivation spread quickly through the hilly and marginal areas that bordered on the irrigated rice lands of southern China. They became vital supplements to the staple rice or millet diet of the Chinese people, particularly those of the rapidly growing southern regions.
