Although this is of course a matter of opinion, I would say 'a mosaic'. The reason: a melting pot suggests that all races and creeds in the USA intermingle, intermarry etc. and that group-related races, backgrounds, traditions and beliefs are hardly discernible. In the USA many ethnic groups are clearly different and proud to be, even while living and working closely together.
