General George S. Patton, did not author this quote, nor did it apply to any who have fought!
It applied to me, a veteran of two wars!
The actual quote:

Mr. Craft, did however appear in the movie "Patton" as one of the cast of thousands in 1969, and he was assigned to an Anti Tank Battalion, during periods of heavy combat, in real life.

The actual full quote is as follows:
"You've never lived until you've almost died. For those who have fought for it, life has a flavor the protected shall never know"
It was written by French author Henri René Albert Guy de Maupassant (05 August 1850 -- 06 July 1893). Guy de Maupassant died when Patton was 8 years old.
Patton may have rewritten the line, but it certainly did not originate with him.
