It depends a lot which part of the medieval era you are talking about, since that could cover any time between 500 and 1500 AD. Over a thousand years a lot could and did change. It also depends a lot on where you are talking about.

Some people probably wore clothes made of animal hides, which means fur or leather. Peasants in those days wasted little or nothing from the animals they killed. They ate, wore or sold what they could. That's why they invented black pudding.

Linen fabric was readily available at all times as was fabric made from wool.
