The Ancient Greek Christian writers wrote in ancient Greek. Ancient Roman Christian writers wrote in Latin.

It cannot really be said that either helped to preserve these language by writing. There is a lot of writing in these languages which was written for centuries before the advent of Christianity which has survived. What helped to preserve Latin writing was the fact that Charlemagne commissioned Catholic monks to transcribe Roman manuscripts and store them in monasteries. Likewise, Orthodox monks kept non-christian books in their monasteries.
