They were caught completely off-guard and had no winter equipment. Stalingrad was also a key point, because the oil fields were located just beyond Stalingrad. The oil kept the USSR war effort running strong. Taking the oil away would give the German army a boost and pull the Soviets to a halt.
Hitler did not have the resources or the manpower to supply the borders. When one area fell the Germans were flanked and they fell like the domino-effect.
